Happiness is...
Waking up to your ten year old making pancakes for the first time all by herself,
from finding the recipe on the computer to taking the grill down from the top of the cupboard.
Without any help from Mom or Dad.
They were the best Saturday Morning Pancakes we have ever tasted.
Now...
just to get her to learn how to make coffee : )
Pancake Recipe
2 cups all purpose flour
4 Tbsp white sugar
4 Tbsp baking powder
2 tsp salt
2 eggs beaten
2 cups milk
4 Tbsp canola oil
In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the centre and pour in milk, egg and oil, mix until smooth. Pour into 4 inch circles on hot griddle until bubbles form and flip.
Enjoy!

These look great! Our kiddos just love pancakes and I have a mix that uses Kamut Khorasan Wheat flour and it is so incredibly healthy! Yummy pancakes - now I feel the need to make a batch! LOL
